This super delish Vegan Thai Peanut Noodle Stir Fry is the perfect quick fix! The prep is very simple! Cook noodles, chop the sweet potatoes, and steam in the microwave. Toss all veggies in wok or pan and stir dressing into drained noodles. Serve veggies on top of noodles, top with green onion and sesame seeds, and dig in!
