Cook the Sweet Potato (1) in covered casserole dish in 1-2 inches of water for 6 minutes in the Panasonic Microwave Oven until soft.
In a bowl, whisk together Canola Oil (1/2 cup), Low-Sodium Soy Sauce (1/4 cup), Creamy Natural Peanut Butter (1/4 cup), Maple Syrup (1/4 cup), Toasted Sesame Oil (1 tablespoon), and Sesame Seeds (1 tablespoon). Set aside.
Add Grapeseed Oil (to taste) to wok or pan and cook drained sweet potatoes, Broccoli Florets (2 cup), and Red Chili Pepper (1) for 2-3 mins to desired texture.
Pour dressing over Linguine (8 ounce) and stir. A generous amount will give more flavor.
Pile noodles in a bowl with veggies on top. Add Scallion (3 stalk) and Roasted Sesame Seeds (to taste) and enjoy! Cooking results may vary depending on microwave oven used.
