This super delish Vegan Thai Peanut Noodle Stir Fry is the perfect quick fix! The prep is very simple! Cook noodles, chop the sweet potatoes, and steam in the microwave. Toss all veggies in wok or pan and stir dressing into drained noodles. Serve veggies on top of noodles, top with green onion and sesame seeds, and dig in! (Partnership with Panasonic)

Step 1
Cook the Sweet Potato (1) in covered casserole dish in 1-2 inches of water for 6 minutes in the Panasonic Microwave Oven until soft.
Step 2
In a bowl, whisk together Canola Oil (1/2 cup) , Low-Sodium Soy Sauce (1/4 cup) , Creamy Natural Peanut Butter (1/4 cup) , Maple Syrup (1/4 cup) , Toasted Sesame Oil (1 Tbsp) , and Sesame Seeds (1 Tbsp) . Set aside.
Step 3
Add Grapeseed Oil (to taste) to wok or pan and cook drained sweet potatoes, Broccoli Florets (2 cups) , and Red Chili Pepper (1) for 2-3 mins to desired texture.
Step 4
Pour dressing over Linguine (8 oz) and stir. A generous amount will give more flavor.
Step 5
Pile noodles in a bowl with veggies on top. Add Scallions (3 stalks) and Roasted Sesame Seeds (to taste) and enjoy! Cooking results may vary depending on microwave oven used.
