Step 1
Cook the
Sweet Potato (1)
in a covered casserole dish in 1-2 inches of water for 5-6 minutes in a microwave oven.
Step 2
Slice
Vegetarian Sausage (3)
into 1/2-inch to 3/4-inch pieces.
Step 3
Toss in wok with
Grapeseed Oil (1 Tbsp)
and
Brown Mushrooms (1 cup)
. Cook over medium-high heat until golden, stirring frequently.
Step 4
Add
Pasta (7 oz)
, sweet potatoes,
Fresh Spinach (1 cup)
, and
Sun-Dried Tomatoes in Olive Oil (1/3 cup)
to wok. Add
Grapeseed Oil (1 Tbsp)
and stir evenly.
Step 5
Add
Greek Seasoning (1/2 tsp)
or salt & pepper to taste. Enjoy!
