In a large pan, sauté the Thick-Cut Bacon (4 oz) over low heat about 4-5 minutes. Add Olive Oil (1 Tbsp) to the pan, along with Yellow Onion (1), Celery (2 stalks), Carrots (2) and cook over medium-low heat until soft, about 5 minutes.

Add Ground Pork (2 lb) and raise the heat to medium-high. Season with Salt (to taste) and Ground Black Pepper (to taste) and sauté until browned, breaking it up with a spatula. Add White Wine (1/4 cup) and cook until it reduces down, about 4 minutes.

If you used a skillet for the first two steps, transfer the pork and vegetables to the crock pot. Add Tomato Paste (1 can) and Crushed Tomatoes (2 cans). Cover and set the slow cooker to low. Slow cook for 4-6 hours.
