Step 1
In a large pan, sauté the
Thick-Cut Bacon (4 oz)
over low heat about 4-5 minutes. Add
Olive Oil (1 Tbsp)
to the pan, along with
Yellow Onion (1)
,
Celery (2 stalks)
,
Carrots (2)
and cook over medium-low heat until soft, about 5 minutes.
Step 2
Add
Ground Pork (2 lb)
and raise the heat to medium-high. Season with
Salt (to taste)
and
Ground Black Pepper (to taste)
and sauté until browned, breaking it up with a spatula. Add
White Wine (1/4 cup)
and cook until it reduces down, about 4 minutes.
Step 3
If you used a skillet for the first two steps, transfer the pork and vegetables to the crock pot. Add
Tomato Paste (1 can)
and
Crushed Tomatoes (2 cans)
. Cover and set the slow cooker to low. Slow cook for 4-6 hours.
Step 4
Once slow cooking is complete, adjust
Salt (to taste)
and
Ground Black Pepper (to taste)
and stir in the
Half and Half (1/2 cup)
.
Step 5
Serve over your favorite pasta. Enjoy!
