Minneapolis used to have the most amazing banh mi sandwiches at a place called Bun Mi on the U of M campus. They have since torn it down! Where to get an awesome banh mi? I guess we’ll have to make our own.

Vegan Mayonnaise

Sriracha

as needed
Canola Oil Spray
•
to taste
Sesame Seeds

Cooking Instructions
1.
Cut one piece of
Trader Joe's® Sriracha Flavored Baked Tofu (1 pckg)
into 5 equal parts. We use 3 of them in this recipe, feel free to us all- (just add 50 calories). Spray small pan with
Canola Oil Spray (as needed)
and cook both sides until browned.
2.
Mix
Sriracha (1/2 tsp)
and
Vegan Mayonnaise (1 Tbsp)
and spread on
Joseph's® Flax, Oat Bran and Whole Wheat Mini Pita Bread (1)
.
3.
In a small bowl, mix
Green Cabbage (1/2 cup)
and
Pickle Juice (1 Tbsp)
and
Sesame Seeds (to taste)
. Add cabbage to pita.
4.
Top with tofu and serve.
