Minneapolis used to have the most amazing banh mi sandwiches at a place called Bun Mi on the U of M campus. They have since torn it down! Where to get an awesome banh mi? I guess we’ll have to make our own.

Canola Oil Spray

Cooking Instructions
1.
Cut one piece of Tofu (1 package) into 5 equal parts. We use 3 of them in this recipe, feel free to us all- (just add 50 calories). Spray a small pan with Canola Oil Spray (as needed) and cook both sides until browned.
2.
Mix Sriracha (1/2 teaspoon) and Vegan Mayonnaise (1 tablespoon) and spread on Pita Bread (1).
3.
In a small bowl, mix Green Cabbage (1/2 cup) and Pickle Juice (1 tablespoon) and Sesame Seeds (to taste). Add cabbage to pita.
4.
Top with tofu and serve.
