Step 1
Preheat the oven to 425 degrees F (220 degrees C)
Step 2
Slice the
Yellow Onion (1)
. Remove the florets from the
Cauliflower (1 handful)
. Toss the cauliflower florets, sliced onion,
Curry Powder (2 Tbsp)
and
Olive Oil (2 Tbsp)
together in a mixing bowl.
Step 3
Place the cauliflower and onions on a foil lined baking sheet. Spread them out evenly and roast in the oven for 25 minutes.
Step 4
Place the roasted cauliflower and onions in the Vitamix. Add
Water (3 cups)
,
Vegetable Broth Powder (1/2 Tbsp)
,
Cayenne Pepper (to taste)
and
Salt (to taste)
. Blend on variable 1 to 10 for 60 seconds. Then place on high for 6 minutes.
Step 5
Garnish with some sliced
Scallions (to taste)
and crumbled
Blue Corn Tortilla Chips (to taste)
. Enjoy!
