Preheat the oven to 425 degrees F (220 degrees C)
Slice the Yellow Onion (1). Remove the florets from the Cauliflower (1 handful). Toss the cauliflower florets, sliced onion, Curry Powder (2 tablespoon) and Olive Oil (2 tablespoon) together in a mixing bowl.
Place the cauliflower and onions on a foil lined baking sheet. Spread them out evenly and roast in the oven for 25 minutes.
Place the roasted cauliflower and onions in the Vitamix. Add Water (3 cup), Vegetable Broth Powder (2 teaspoon), Cayenne Pepper (to taste) and Salt (to taste). Blend on variable 1 to 10 for 60 seconds. Then place on high for 6 minutes.
Garnish with some sliced Scallion (to taste) and crumbled Blue Corn Tortilla Chips (to taste). Enjoy!
