Step 1
In a large bowl, using a potato masher or large whisk, coarsely smash most of the
Chickpeas (2 cans)

Step 2
Add the
Celery (2 stalks)

Scallions (1/4 cup)

Mayonnaise (1/4 cup)
, and 3 Tbsp of
Lemon (1)
to the chickpeas and mix well. Season generously with
Sea Salt (to taste)
and
Ground Black Pepper (to taste)
. Stir in the
Fresh Chives (1/4 cup)
and the
Fresh Parsley (1/2 cup)
.
Step 3
Spoon the chickpea salad into the
Bibb Lettuce (12 pieces)
and serve.
