In a large bowl, using a potato masher or large whisk, coarsely smash most of the Chickpeas (2 can).
Add the Scallion (1/4 cup), Sea Salt (to taste), Ground Black Pepper (to taste), and 3 Tbsp of Lemon (1) to the chickpeas and mix well. Season generously with Fresh Parsley (1/2 cup) and Fresh Chives (1/4 cup). Stir in the Celery (2 stalk) and the Mayonnaise (1/4 cup).
Spoon the chickpea salad into the Bibb Lettuce (12 piece) and serve.
