Sopa De Fideo (Mexican Noodle Soup)

This soup is incredibly simple to make and only requires a few very basic ingredients – noodles, tomato, onion, garlic, soup, vegetable stock and salt. You can basically get all of these ingredients everywhere around the world in order to enjoy the taste of Mexico in a little bowl.

Soup
1/2 can (200 milliliter) Canned Tomatoes
100 gram Noodles
1/2 Medium White Onion
1 clove Garlic
1 teaspoon Vegetable Bouillon Cube
1/4 teaspoon Salt
2 tablespoon Vegetable Oil
600 milliliter boiled Water
Garnish
1 Lime , cut into wedges

STEP 1
Puree Canned Tomatoes (1/2 can), White Onion (1/2) and Garlic (1 clove) in a blender, set aside.
STEP 2
Heat the Vegetable Oil (2 tablespoon) in a pot, add Noodles (100 gram) and stir until they turn golden brown.
STEP 3
Add the tomato puree to the pot, mix well with the crispy brown noodles, cook for 1 minute.
STEP 4
Stir in Water (600 milliliter), then bring to a boil.
STEP 5
Cover the lid and reduce to medium-low heat. Simmer for 8 to 10 minutes until noodles are tender, stir occasionally. Season with Salt (1/4 teaspoon) and Vegetable Bouillon Cube (1 teaspoon) to taste.
STEP 6
Slice 1/4 inch off of each end of the Lime (1) and cut it in half, lengthwise. Set one of the halves cut side-down​ on the cutting board and slice it at an angle, lengthwise to make 2 wedges. Set these lime wedges aside.
STEP 7
Serve warm in a bowl, garnish with Fresh Cilantro (1 handful) and Avocado (1) on top and serve the soup with lime wedges.
