Slice the Okra (2 1/2 cups) into 1/2-inch pieces.

In a large pot, heat up Canola Oil (2 Tbsp). Fry okra until they start to brown, about 5-7 minutes. Remove from pot and set aside.

To make your own Cajun seasoning blend, mix Salt (2 tsp), Ground Black Pepper (as needed), Cayenne Pepper (1 tsp), Paprika (2 tsp) and Dried Oregano (2 tsp) together in a small bowl.

Over medium-high heat, add Canola Oil (2 Tbsp), Unsalted Butter (2 Tbsp) and All-Purpose Flour (4 Tbsp) to the pot. Stir with a wooden spoon constantly until the mixture smells nutty and turns a medium-shade of brown, about 3-4 min.

Add the prepared Red Chili Pepper (1), Green Bell Pepper (1), Yellow Onion (1), Garlic (3 cloves), and Tomatoes (3). Stir, scraping the bottom of the pot and cook until softened, about 6-8 minutes.

Add 2 tablespoon of prepared Cajun Seasoning, cook for an additional 1 minute.

Add Bay Leaves (2) and Chicken Stock (5 cups). Bring to a simmer and simmer for about 30 minutes.
