Step 1
Preheat oven to 350 degrees F. Line loaf pan, about a 5in x 10in, with parchment paper. Zest the
Orange (1)
. Melt the
Unsalted Butter (1/3 cup)
and allow to cool.
Step 2
Whisk together
All-Purpose Flour (1 1/4 cups)
,
Kosher Salt (1 tsp)
, and
Baking Powder (1 tsp)
in medium bowl. Set aside. In a small bowl, stir together
Ricotta Cheese (1/2 cup)
and
Half and Half (2 Tbsp)
until smooth. Set aside.
Step 3
Combine grated orange zest and
Granulated Sugar (1 cup)
in large mixing bowl and using your fingers, rub the zest into the sugar.
Step 4
Whisk in
Oranges (1/4 cup)
,
Large Eggs (2)
, cooled butter, and
Vanilla Extract (1 tsp)
.
Step 5
Fold in ⅓ of the flour mixture until just combined. Then fold in ½ of ricotta mixture. Continue this (flour, ricotta, flour, ricotta, flour) mixing after each addition.
Step 6
Pour batter into prepared loaf pan and place in preheated oven for 50 to 55 minutes until browned and golden and toothpick when inserted comes out clean.
Step 7
Remove cake from oven and let cool for about 10 to 15 minutes before turning out of pan and letting it cool completely before glazing.
Step 8
To make the glaze, sift
Powdered Confectioners Sugar (1 cup)
into a small bowl. Add
Orange Juice (2 1/2 Tbsp)
and whisk until smooth.
Step 9
Pour glaze over cooled cake.
