Add Chicken Backbones (5) , Fennel Bulbs (1 bulb) , Onion (1) , Bay Leaf (1) , Black Peppercorns (1 Tbsp) , Fresh Ginger (3 in) , Garlic (1 head) , and Jalapeño Pepper (1) to a stock pot. Cover with Water (to taste) .
Step 2
Bring to boil. Reduce to a light simmer. Cover. Cook 24-48 hours on lowest setting.
Step 3
Season with Soy Sauce (to taste) to taste before serving!
