Add Chicken Backbones (5), Fennel Bulb (1 bulb), Onion (1), Bay Leaf (1), Black Peppercorns (1 tablespoon), Fresh Ginger (3 inch), Garlic (1 head), and Jalapeño Pepper (1) to a stock pot. Cover with Water (to taste).
Bring to boil. Reduce to a light simmer. Cover. Cook 24-48 hours on lowest setting.
Season withSoy Sauce (to taste) to taste before serving!
