Dice the Onion (1 cup).
Chop the Fresh Parsley (2 tablespoon).
Sauté the onion until soft and translucent.
Mix Ground Veal (1 pound) and Ground Pork (1 pound) with Egg (2), chopped parsley, Dijon Mustard (1 tablespoon), Ketchup (1 tablespoon), diced sauteed onions, Panko Breadcrumbs (1/4 cup), Sweet Paprika (2 tablespoon), Kosher Salt (to taste) and Cayenne Pepper (to taste).
Dice the Swiss Cheese (6 ounce).
Add diced swiss cheese.
Form 4 large patties.
Beat the last Egg (1) in a bowl.
Use standard breading method. Dip in beaten egg then Panko Breadcrumbs (to taste). Make sure to press the patties into the breadcrumbs so it's fully covered.
Sautee in Olive Oil (to taste) and Butter (to taste) until medium well, the carry-over heat will do the rest.
Slice the Lemon (to taste).
Serve with lemon and a Salad. Enjoy!
