Make the yogurt sauce. In a small bowl combine Oat Yogurt (1 cup), Garlic (2 cloves), 1 tsp of Lemon Juice (1), and Salt (to taste), place in the fridge until ready to serve.

Prepare the Salad. In a medium-size bowl combine Cherry Tomatoes (1 1/2 cups), Cucumber (1/4), Red Onion (1/4), Fresh Parsley (4 Tbsp), Olive Oil (2 Tbsp), and Red Wine Vinegar (1 Tbsp). Place in the fridge until ready to serve.
