Make the yogurt sauce. In a small bowl combine Oat Yogurt (1 cup) , Garlic (2 cloves) , 1 tsp of Lemon Juice (1) , and Salt (to taste) , place in the fridge until ready to serve.
Step 2
Prepare the Salad. In a medium-size bowl combine Cherry Tomatoes (1 1/2 cups) , Cucumber (1/4) , Red Onion (1/4) , Fresh Parsley (1/4 cup) , Olive Oil (2 Tbsp) , and Red Wine Vinegar (1 Tbsp) . Place in the fridge until ready to serve.
