Zesty White Bean and Tuna Lettuce Wraps

These wonderful Zesty White Bean and Tuna Lettuce Wraps are easy to toss together for a quick lunch. The salad can be made ahead of time and wrapped in lettuce at the last minute. Also a good way to extend that can of tuna if you’re looking to have budget friendly meals.

4 tablespoon Mayonnaise
1 tablespoon Sour Cream
3 teaspoon Dijon Mustard
3 thinly sliced Shallot
1 pinch Salt
to taste Butter Lettuce
to taste Pea Shoots

STEP 1
In a medium size bowl stir together Mayonnaise (4 tablespoon), Sour Cream (1 tablespoon), Dijon Mustard (3 teaspoon), Shallot (3), Capers (2 tablespoon), Celery (1 stalk), Fresh Dill (1 tablespoon), Fresh Parsley (1 tablespoon), Salt (1 pinch), and Ground Black Pepper (1 pinch).
STEP 2
Gently stir in Canned Tuna Packed in Water (184 gram) and Canned White Beans (1 cup).
STEP 3
Spread out 2-3 Butter Lettuce (to taste) overlapping each leaf to create a solid surface for the salad.
STEP 4
Mound an approximate 1/3 cup of tuna, Pea Shoots (to taste), and bean salad onto the center of the lettuce bed. Wrap lettuce around salad, tucking in the ends as you roll, much like a cabbage roll.
STEP 5
Cut in half and serve immediately, enjoy!
