Cut each of the Pita Bread (3 pieces) into 6 evenly-sized triangles. Add them to a baking tray lined with foil paper and drizzle with Extra Virgin Spanish Olive Oil (to taste). Season with Sea Salt (to taste).

Flip the pita triangles and bake for an additional 4 minutes, then remove from the oven and set aside to cool.

Add the pita chips to a round baking dish lined with parchment paper. Top them off with the Manchego Cheese (3/4 cup).
