Preheat oven to 480 degrees F (250 degrees C).
Cut each of the Pita Bread (3 piece) into 6 evenly-sized triangles. Add them to a baking tray lined with foil paper and drizzle with Extra Virgin Spanish Olive Oil (to taste). Season with Sea Salt (to taste).
Bake pita for 5 minutes.
Flip the pita triangles and bake for an additional 4 minutes, then remove from the oven and set aside to cool.
Add the pita chips to a round baking dish lined with parchment paper. Top them off with the Manchego Cheese (3/4 cup).
Bake for 3-4 minutes.
Top off the cheesy pita chips with the Red Onion (1/2), Green Bell Pepper (1), Jarred Roasted Red Peppers (3), Black Olives (8), and Sea Salt and Pepper (to taste).
Add a generous dollop of Greek Yogurt (to taste) on top, then sprinkle the nachos with Hot Smoked Paprika (to taste) and garnish with Fresh Chives (to taste).
