Step 1
Preheat oven to 475 degrees F (250 degrees C).
Step 2
Cut each of the
Pita Bread (3 pieces)
into 6 evenly-sized triangles. Add them to a baking tray lined with foil paper and drizzle with
Extra Virgin Spanish Olive Oil (to taste)
. Season with
Sea Salt (to taste)

Step 3
Bake pita for 5 minutes.
Step 4
Flip the pita triangles and bake for an additional 4 minutes, then remove from the oven and set aside to cool.
Step 5
Add the pita chips to a round baking dish lined with parchment paper. Top them off with the
Manchego Cheese (3/4 cup)

Step 6
Bake for 3-4 minutes.
Step 7
Top off the cheesy pita chips with the
Red Onion (1/2)
,
Green Bell Pepper (1)
,
Jarred Roasted Red Peppers (3)
,
Black Olives (8)
,
Sea Salt (to taste)
and
Ground Black Pepper (to taste)

Step 8
Add a generous dollop of
Greek Yogurt (to taste)
on top, then sprinkle the nachos with
Hot Smoked Paprika (to taste)
and garnish with
Fresh Chives (to taste)
