Gazpacho is a very refreshing soup, typical in Andalucia. There are lots of ways to make it. This is a very simple recipe that a friend from Sevilla gave to me, so I hope you enjoy it as much as do!

Olive Oil

Apple Cider Vinegar

to taste
Salt

to taste
Ground Black Pepper

to taste
Ground Garlic
Cooking Instructions
1.
Quater the Tomatoes (8 1/3 cups).
2.
Deseed and roughly chop the Green Bell Pepper (1) and Yellow Bell Pepper (1).
3.
Roughly chop the Carrot (1).
4.
Roughly chop the Cucumber (1/2).
5.
Add all the vegetables to a bowl and blend with a stick blender. You can also put everything in a regular blender.
6.
Strain through a colander to smooth out the gazpacho, blending as you go.
7.
And Olive Oil (to taste), Apple Cider Vinegar (to taste), Salt (to taste), Ground Black Pepper (to taste), and Ground Garlic (to taste).
8.
Blend everything on low speed. Serve and enjoy!
