Preheat the oven to 400 degrees F (200 degrees C).

In a bowl, combine the Leek (1), Granny Smith Apple (1), Fresh Thyme (2 sprigs), Fresh Sage (2 sprigs), Ground Pork (1.1 lb), and Hot English Mustard (1 tsp). Season with Sea Salt (to taste) and Ground Black Pepper (to taste).

On a floured surface, roll out the Puff Pastry (1.1 lb) till 1-millimeter thick and about 34x30-centimeter.

Halve the pastry lengthways and place a strip of the mince mixture down the middle of each pastry strip. Brush the pastry edges with Farmhouse Eggs® Large Brown Egg (1), carefully roll up and seal.

Slice each strip into three sections and brush with the beaten egg. Score the tops and place the sausage rolls on a lined baking sheet.
