Step 1
Preheat the oven to 400 degrees F (200 degrees C).
Step 2
In a bowl, combine the Leek (1) , Granny Smith Apple (1) , Fresh Thyme (2 sprigs) , Fresh Sage (2 sprigs) , Ground Pork (1.1 lb) , and Hot English Mustard (1 tsp) . Season with Sea Salt (to taste) and Ground Black Pepper (to taste) .
Step 3
On a floured surface, roll out the Puff Pastry (1.1 lb) till 1-millimeter thick and about 34x30-centimeter.
Step 4
Halve the pastry lengthways and place a strip of the mince mixture down the middle of each pastry strip. Brush the pastry edges with Large Egg (1) , carefully roll up and seal.
Step 5
Slice each strip into three sections and brush with the beaten egg. Score the tops and place the sausage rolls on a lined baking sheet.
Step 6
Bake for 20 minutes or until golden and cooked through.
