Step 1
Slice the
Green Tomatoes (3)
into 1/3 inch circles.
Step 2
Put
Unsweetened Soy Milk (1/2 cup)
in a small bowl and put
Whole Wheat Flour (1/2 cup)
,
Panko Breadcrumbs (1/2 cup)
,
Tapioca Starch (1 Tbsp)
,
Salt (1 tsp)
, and
Freshly Ground Black Pepper (1/2 tsp)
in another small bowl and mix.
Step 3
Dip tomato in milk, covering both sides, and then dip and fully coat tomato slice in dry mix. Repeat with all tomatoes.
Step 4
In a large frying pan, pour
Vegetable Oil (as needed)
to a depth of approximately 1/4 inch.
Step 5
Gently place the tomatoes in the pan on high. Fry each side for approximately 2 minutes, or until golden brown.
Step 6
Remove from pan and place on paper towels.
Step 7
In a small bowl, smash
Avocado (1)
with a fork. Add
Vegan Mayonnaise (3 Tbsp)
,
Buffalo Sauce (1 Tbsp)
,
Nutritional Yeast (1 tsp)
,
Garlic Powder (1/4 tsp)
, and
Salt (to taste)
.
Step 8
Stir until almost smooth.
Step 9
Serve fried tomatoes with special sauce and enjoy!
