Slice the Green Tomato (3) into 1/3 inch circles.
Put Unsweetened Soy Milk (1/2 cup) in a small bowl and put Whole Wheat Flour (1/2 cup), Panko Breadcrumbs (1/2 cup), Tapioca Flour (1 tablespoon), Salt (1 teaspoon), and Freshly Ground Black Pepper (1/2 teaspoon) in another small bowl and mix.
Dip tomato in milk, covering both sides, and then dip and fully coat tomato slice in dry mix. Repeat with all tomatoes.
In a large frying pan, pour Vegetable Oil (to taste) to a depth of approximately 1/4 inch.
Gently place the tomatoes in the pan on high. Fry each side for approximately 2 minutes, or until golden brown.
Remove from pan and place on paper towels.
In a small bowl, smash Avocado (1) with a fork. Add Vegan Mayo (3 tablespoon),Buffalo Sauce (1 tablespoon), Nutritional Yeast (1 teaspoon), Garlic Powder (1/4 teaspoon), and Salt (to taste).
Stir until almost smooth.
Serve fried tomatoes with special sauce and enjoy!
