Bring a large pot of water to boil, add Egg (12) cook for 9 minutes. Remove and rinse in cold water, then peel. Place the hardboiled eggs on a smoker mat and assemble your ingredients.
Open your Traeger lid and set to smoke. Once smoke appears, place the eggs on the grill. Close the grill and allow to smoke for 45 minutes.
Once cool enough to handle, slice in half. Carefully scoop the yolks into a medium bowl.
To the bowl with the yolks, add Mayonnaise (1/2 cup), half of the diced Bacon (1 slice), Apple Cider Vinegar (2 teaspoon), Spicy Brown Mustard (2 teaspoon), Chili Powder (1/2 teaspoon), Fresh Chives (2 tablespoon), Salt (1/4 teaspoon), Freshly Ground Black Pepper (to taste) and Hot Sauce (to taste). Using a fork, mash the mixture together and taste for seasoning. Add more salt if needed.
Using either a piping bag with your largest tip, or a teaspoon, fill each egg white with about 2-3 tsp of the yolk mixture.
Top with a sprinkle of Smoked Paprika (1/2 teaspoon) and the rest of the Bacon (1 slice). Enjoy!
