Step 1
Bring a large pot of water to boil, add
Eggs (12)
cook for 9 minutes. Remove and rinse in cold water, then peel. Place the hardboiled eggs on a smoker mat and assemble your ingredients.
Step 2
Open your Traeger lid and set to smoke. Once smoke appears, place the eggs on the grill. Close the grill and allow to smoke for 45 minutes.
Step 3
Once cool enough to handle, slice in half. Carefully scoop the yolks into a medium bowl.
Step 4
To the bowl with the yolks, add
Mayonnaise (1/2 cup)
, half of the diced
Bacon (1 slice)
,
Apple Cider Vinegar (1/2 Tbsp)
,
Spicy Brown Mustard (1/2 Tbsp)
,
Chili Powder (1/2 tsp)
,
Fresh Chives (2 Tbsp)
,
Salt (1/4 tsp)
,
Freshly Ground Black Pepper (to taste)
and
Hot Sauce (to taste)
. Using a fork, mash the mixture together and taste for seasoning. Add more salt if needed.
Step 5
Using either a piping bag with your largest tip, or a teaspoon, fill each egg white with about 2-3 tsp of the yolk mixture.
Step 6
Top with a sprinkle of
Smoked Paprika (1/2 tsp)
and the rest of the
Bacon (1 slice)
. Enjoy!
