Preheat oven to 350 degrees F (180 degrees C).

Melt Ghee (4 Tbsp) over medium heat. Add Garlic (1 clove) and stir until fragrant.

Place Red Potatoes (5) in a baking dish, drizzle garlicky ghee over top of potatoes and stir to make sure they are evenly coated.

Bake in oven for 35-40 minutes until fork tender.

Chop the Italian Flat-Leaf Parsley (4 Tbsp).

Remove from the oven and sprinkle fresh parsley over the top of the potatoes. Season with Salt (to taste) and Simply Organic Black Pepper, Medium Grind (to taste). Serve immediately.
