Preheat oven to 350 degrees F (180 degrees C).
Melt Ghee (1/4 cup) over medium heat. Add Garlic (1 clove) and stir until fragrant.
Place Red Potato (5) in a baking dish, drizzle garlicky ghee over top of potatoes and stir to make sure they are evenly coated.
Bake in oven for 35-40 minutes until fork tender.
Chop the Italian Flat-Leaf Parsley (1/4 cup).
Remove from oven and sprinkle fresh parsley over top of potatoes. Season with Salt and Pepper (to taste). Serve immediately.
