One of the most popular side dishes in traditional Austrian restaurants is potatoes with parsley. Traditionally this dish is made by boiling peeled potatoes, but I used red potatoes and I didn't peel them because there's where most of the minerals are stored.

, washed, cubed

Ghee
, melted

Garlic
, minced

Tbsp
Italian Flat-Leaf Parsley
, firmly packed, finely chopped

to taste
Salt

Ground Black Pepper
Cooking Instructions
1.
Preheat oven to 350 degrees F (180 degrees C).
2.
Melt Ghee (4 Tbsp) over medium heat. Add Garlic (1 clove) and stir until fragrant.
3.
Place Red Potatoes (5) in a baking dish, drizzle garlicky ghee over top of potatoes and stir to make sure they are evenly coated.
4.
Bake in oven for 35-40 minutes until fork tender.
5.
Chop the Italian Flat-Leaf Parsley (4 Tbsp).
6.
Remove from the oven and sprinkle fresh parsley over the top of the potatoes. Season with Salt (to taste) and Ground Black Pepper (to taste). Serve immediately.
