Step 1
On a cast iron skillet on high heat add the
Ground Beef (1.5 lb)
. Break apart with your spoon.
Step 2
Add in the
Onion (1)
and
Green Bell Pepper (1)
. Keep cooking and stirring until ground beef is almost completely cooked. Season with
Salt (1/2 Tbsp)
,
Ground Black Pepper (1/2 Tbsp)
,
Ground Cumin (1 Tbsp)
,
Chili Powder (1/2 Tbsp)
and
Paprika (1/2 Tbsp)
. Keep stirring on high heat.
Step 3
Add the
Canned Diced Tomatoes with Green Chilies (1 cup)
and
Canned Diced Tomatoes (1 3/4 cups)
. Continue to cook for 1 to 2 minutes and then remove from the heat.
Step 4
Spoon some of the ground beef mixture over the bottom of a glass baking tray. Add the
Tortillas (6)
and layer it on top of the mixture. Spread the
Refried Beans (1 1/2 cups)
over the tortilla followed by another layer of ground beef mixture and some of the
Shredded Cheese (4 cups)
. Continue to layer the tortillas, ground beef, cheese, tortillas, ground beef and cheese.
Step 5
Preheat the oven at 350 degrees F (180 degrees C).
Step 6
Bake the lasagna for 35 to 40 minutes until nice and golden.
Step 7
Remove from oven and sprinkle another layer of
Shredded Cheese (1 1/2 cups)
and place back in the oven for another 5 minutes to melt the cheese.
Step 8
Garnish with
Sour Cream (to taste)
and
Scallions (to taste)
on top. Slice, serve and enjoy!
