Step 1
Cut Watermelons (6 cups) into small cubes depending on your preferred size. Make sure to deseed the watermelon. Set aside.
Step 2
In a large bowl, add the watermelon cubes, Red Onion (1/4) , Jalapeño Peppers (2) , Fresh Cilantro (1 bunch) , Fresh Mint (1 stalk) , Lime (1) , and Tajin (3/4 tsp) . Use a spatula to gently mix until well combined. Optionally, leave the salsa in the fridge for at least 15 minutes.
Step 3
Squeeze some more lime juice and sprinkle more tajin on top. Serve salsa as a side dish along with the main dish or as a snack with Tortilla Chips (as needed) .
