To warm the tortillas: take 10 tortillas at a time and wrap them in a damp paper towel. Heat them in the microwave for 1 minute. Unwrap and pull tortillas apart, so they don’t stick to one another, then re-wrap them with the paper towel to keep them warm during assembly. Repeat the process once you run out of tortillas.

In a large non-stick skillet, heat Olive Oil (1 tsp) over medium-high heat. Add the Yellow Onion (1) and Green Bell Pepper (1) and cook for 5 minutes.

Reduce heat to medium-low, add in Philadelphia Original Soft Cheese (1/2 cup) and Shredded Mexican Cheese Blend (1 cup) and constantly stir until cheese is melted and thoroughly combined. Remove from heat.

Along one edge of an 8-Inch Corn Tortillas (16), scoop 2-3 tablespoons of the ground beef mixture. Tightly roll up each tortilla and secure it closed by laying it seam down. Repeat “fill and roll” with the remaining tortillas; once all the tortillas are rolled, spray with cooking spray.
