Pre-heat the oven to 400 degrees F (200 degrees C).

Add the Ground Beef (1 lb) to a large skillet or cast iron pan and cook on medium heat. Stir often, just until the meat begins to brown. Drain off any excess fat.

Add the Onion (1), Garlic (2 cloves), Fresh Parsley (1/2 cup), and Bell Pepper (1). Continue cooking and stirring until the vegetables begin to soften.

Stir in the Beef Stock (1 cup), Shredded Cheddar Cheese (1 1/2 cups), Salt (1/2 tsp), and Ground Black Pepper (1/4 tsp). Taste and adjust the seasoning to your liking.

Place one sheet of Puff Pastry (1 sheet) on the bottom of a casserole dish and pour the beef mixture over it.

Top with the second sheet of Puff Pastry (1 sheet) and crimp the edges. Cut a couple of slices across the top for steam to vent and bake for 30 minutes or until the crust is golden brown. Serve hot.
