Cooking Instructions
1.
Preheat the oven to 375 degrees F (190 degrees C).
2.
Fill a large deep pan halfway with water and bring to a boil over medium-high heat. Add Red Potato (3 pound) and set the timer for 8 minutes.
3.
Combine 85/15 Lean Ground Beef (1 pound), Doritos® Nacho Cheese Flavored Tortilla Chips (1 ounce), Egg (1), Taco Seasoning (1 packet), Onions and Peppers (2 ounce), Canola Oil (2 tablespoon), and Salsa (1/2 cup) in a large mixing bowl until combined.
4.
Form into four evenly sized meatloaves, placing on a sheet pan or baking stone.
5.
Top each with salsa, add to oven and set timer for 20 minutes.
6.
Drain potatoes and add to bowl of a stand mixer, along with Cream Cheese (4 ounce), Salted Butter (4 tablespoon), and Mayonnaise (2 tablespoon).
7.
Stir on low until combined and potatoes are mashed. Taste and adjust Sea Salt (1 teaspoon) and Ground Black Pepper (1 teaspoon).
8.
When the 20-minute timer goes off, top the meatloaves with Shredded Mexican Cheese Blend (9 ounce) and return to oven. Set the timer for another 3 minutes.
9.
If the cheese has not melted, return to oven for another 2-3 minutes.
10.
Sprinkle meatloaves with Fresh Cilantro (1 handful) and serve with mashed potatoes.
Author's Notes
If you have fresh onions and bell peppers on hand, those will work, of course. Just dice one of each.
Any crackers or plain flavored chips will work in place of Doritos.
Restaurant style salsa has a thinner consistency, and makes for an easier topping.
