Step 1
Bring a large pot of water to a boil. Add the
Orzo Pasta (1 pckg)
and cook according to the package instructions, or for about 8 minutes until al dente. Drain, rinse in cold water, and set aside.
Step 2
In a large bowl toss the
Fresh Baby Spinach (7 1/2 cups)

Tomato (1)

Crumbled Feta Cheese (1 cup)
,
Red Onion (1/2)
,
Pine Nuts (1/2 cup)
,
Dried Basil (1/2 tsp)
,
Granny Smith Apple (1)
, cooked orzo,
Salt (to taste)
, and
Ground Black Pepper (1/4 tsp)
.
Step 3
Mix together the
Olive Oil (1/2 cup)
and
Balsamic Vinegar (1/2 cup)
in a small bowl. Pour over the salad and toss to combine.
Step 4
Top with
Kalamata Olives (1/2 cup)
. Refrigerate and serve cold.
