Step 1
Preheat oven to 400 degrees F (200 degrees C) and bring a large pot of water to a boil.

right in the center, and bake for 20 minutes.

Meanwhile, cook
Penne Pasta (1/2 box)
according to the package directions.
Step 5
One minute before the pasta is ready add ½-cup cooking water over freshly baked feta, and with a spoon smash the cheese and mix.
Step 6
Drain pasta, then mix well with veggies. Stir in
Fresh Basil Leaves (8)
, drizzle with remaining
Extra-Virgin Olive Oil (1 Tbsp)
, and combine well again.
Step 7
Top with
Shelled Pistachios (1/4 cup)
before serving.
