Cook the Potatoes (5.5 oz) in boiling water for 20 minutes. After 10 minutes, add the Eggs (2).

Chop the Green Bell Pepper (1).

Thinly slice the Onions (2 1/2 Tbsp).

Chop the Tomatoes (3).

Once cooked, peel the potatoes and the eggs and dice. Add vegetables and Olives (1/2 cup) to a large bowl with the potatoes and eggs.

In a small bowl, combine Olive Oil (to taste), Balsamic Vinegar (to taste), Salt (to taste), and Ground Black Pepper (to taste).

Toss the dressing with the rest of the ingredients.
