step 1
Preheat oven to 400 degrees F (200 degrees C). Prepare muffin pan with muffin liners. Set aside.

In a large bowl, mix together All-Purpose Flour (1 cup), Cornmeal (1 cup), Baking Powder (1/2 Tbsp), Baking Soda (1/2 tsp), Salt (1/2 tsp), and Granulated Sugar (1/3 cup). Set aside.

Whisk together Butter (1/2 cup), Buttermilk (1 1/2 cups), and Eggs (2).

Add wet ingredients to the flour mixture and whisk until well combined.

Add Sharp Cheddar Cheese (1 1/2 cups), Cooked Bacon (6 slices), and Scallion (1/3 cup). Fold everything together.

Fill each muffin tin almost all the way up with batter.
step 7
If using a jumbo muffin pan, bake for 23-25 minutes in the preheated oven. If using regular muffin pan, bake for 13-15 minutes.

Allow to cool slightly. Serve and enjoy!
