Cornmeal
1/2 Tbsp
Baking Powder
1/2 tsp
Baking Soda
1/2 tsp
1/2 cup
Butter , melted
1 1/2 cups
Buttermilk
1 1/2 cups
Sharp Cheddar Cheese , grated
6 slices
1/3 cup
Scallions , chopped

Step 1
Preheat oven to 400 degrees F (200 degrees C). Prepare muffin pan with muffin liners. Set aside.
Step 2
In a large bowl, mix together All-Purpose Flour (1 cup) , Cornmeal (1 cup) , Baking Powder (1/2 Tbsp) , Baking Soda (1/2 tsp) , Salt (1/2 tsp) , and Granulated Sugar (1/3 cup) . Set aside.
Step 3
Whisk together Butter (1/2 cup) , Buttermilk (1 1/2 cups) , and Eggs (2) .
Step 4
Add wet ingredients to the flour mixture and whisk until well combined.
Step 5
Add Sharp Cheddar Cheese (1 1/2 cups) , Cooked Bacon (6 slices) , and Scallions (1/3 cup) . Fold everything together.
Step 6
Fill each muffin tin almost all the way up with batter.
Step 7
If using a jumbo muffin pan, bake for 23-25 minutes in the preheated oven. If using regular muffin pan, bake for 13-15 minutes.
Step 8
Allow to cool slightly. Serve and enjoy!
