Cooking Instructions

Slice the Pork Belly (1 pckg) into cubes. Lay them out on a wire rack.

Season all sides with Salt (to taste), Ground Black Pepper (to taste), and Cayenne Pepper (to taste).

Cook on grill at 275 degrees F (140 degrees C) for 2 1/2 hours.

Transfer pork belly cubes to a pan.
step 5
Add Butter (1/2 stick) and let melt.
step 6
Drizzle a generous amount of Honey (to taste) over top.

Cover tightly with aluminum foil and place back on the grill for 1 hour.

When cooled, rub pork belly pieces in the honey and butter mixture leftover at the bottom of the pan and place them on a wire rack.

Bring Heavy Cream (12 fl oz) to a boil, and then remove from the heat immediately.

Pour over the Bittersweet Chocolate (2 3/4 cups) and let sit for 3-4 minutes.

Into the chocolate mixture, add the Cayenne Pepper (1 Tbsp) and 1 tablespoon of juice from the Orange (1). Mix well.

Dip the pork belly pieces into the chocolate, coating completely.

Zest the orange and sprinkle some over top.
