Step 1
Preheat oven to 425 degrees F (220 degrees C).
Step 2
Use a fork to poke holes in the Sweet Potatoes (2) .
Step 3
Place them on the parchment-lined baking tray. Bake in the oven for 45-60 minutes until fork tender.
Step 4
Prepare the scrambled eggs. Heat the Butter (1/2 Tbsp) in a skillet over medium heat. Once melted, add the Eggs (4) , Milk (2 Tbsp) , Salt (to taste) , and Ground Black Pepper (to taste) . Once the egg starts to cook, stir until reaching your desired doneness.
Step 5
Cut each sweet potato in the middle half lengthwise. Use a spoon or fork to mix the sweet potato in the shell. Top with Deli Smoked Turkey (2 slices) , Fresh Baby Spinach (2 cups) , and scrambled egg.
Step 6
Sprinkle some Feta Cheese (1/3 cup) on top and serve with Harissa Paste (1/4 cup) .
