Chop Garlic (3 cloves) .
Step 2
Chop the Onion (1) .
Step 3
Slice the Green Bell Pepper (1) .
Step 4
Chop the Potatoes (5) .
Step 5
Slice the Mexican Chorizo (7 oz) .
Step 6
Into a pot add Olive Oil (as needed) garlic, onion, and pepper. Cook for a few minutes.
Step 7
Add the chorizo and potatoes.
Step 8
Season with Salt (to taste) and Ground Black Pepper (to taste) , Smoked Paprika (to taste) , and Bay Leaf (1) . Cook for an additional few minutes.
Step 9
Cover with Water (to taste) .
Step 10
Add Chicken Stock Cube (1) and bring to a boil. Reduce to medium heat and cook for 20-30 minutes.
Step 11
Serve and enjoy!
