step 1
Sauté Potato (1), diced Red Bell Pepper (3/4 cup), and Onion (1/2 cup) in a large skillet over medium-high heat. Once softened, remove from heat and set aside.

Add ½ tsp Olive Oil (as needed) to a large skillet over medium-high heat. Whisk Farmhouse Eggs® Large Brown Eggs (4) together in a small bowl. Pour into hot skillet and stir to create scrambled eggs.

Using the same pan add a drizzle of Olive Oil (as needed). Place the Whole Wheat Tortillas (2) into the pan, and spoon the scrambled Farmhouse eggs onto half of it. Top with the potato mixture. Sprinkle the Shredded Mozzarella Cheese (4 Tbsp) over the top and fold the tortilla in half. Allow to cook for about 3-4 minutes per side, or until the tortilla in golden brown, and the cheese has melted.

Cut the tortilla into a triangle shape to create the rocket body. Use the slices of Radish (1), Red Bell Pepper (1), Yellow Bell Pepper (1), and Cucumber (1) to create the details of the rocket (as pictured).

Serve with a glass of Non-Fat Milk (8 fl oz) and side of Grapes (1 cup).
