Preheat the oven to 350 degrees F (180 degrees C).
Blend or mix together
Tamari Soy Sauce (1/4 cup)
Maple Syrup (1/4 cup)
Apple Cider Vinegar (3 Tbsp)
Spicy Olive Oil (1/4 cup)
Liquid Smoke (1/2 tsp)
Salt (1 tsp)
Paprika (1 Tbsp)
Ground Black Pepper (1 pinch)
Slice the top of the
off. Cut the eggplant in the middle lengthwise.
Using a mandoline, slice the eggplant lengthwise to make strips.
Pour marinade over eggplant strips. If using a dehydrator, marinate for an hour before dehydrating.
Lay eggplant strips on to parchment paper lined baking tray and bake for 8 minutes in preheated oven.
You can serve it with some toasted bread and vegan scrambled eggs or enjoy it by itself!
