Preheat the oven to 350 degrees F (180 degrees C).

Blend or mix together Tamari Soy Sauce (1/4 cup), Maple Syrup (1/4 cup), Apple Cider Vinegar (3 Tbsp), Spicy Olive Oil (1/4 cup), Liquid Smoke (1/2 tsp), Salt (1 tsp), Paprika (1 Tbsp) and Ground Black Pepper (1 pinch).

Slice the top of the Eggplant (1) off. Cut the eggplant in the middle lengthwise.

Using a mandoline, slice the eggplant lengthwise to make strips.

Pour marinade over eggplant strips. If using a dehydrator, marinate for an hour before dehydrating.

Lay eggplant strips on to parchment paper lined baking tray and bake for 8 minutes in preheated oven.

You can serve it with some toasted bread and vegan scrambled eggs or enjoy it by itself!
