Preheat the oven to 350 degrees F (180 degrees C).

Blend or mix together Tamari Soy Sauce (4 Tbsp), Maple Syrup (4 Tbsp), Apple Cider Vinegar (3 Tbsp), Spicy Olive Oil (4 Tbsp), Liquid Smoke (as needed), Salt (1 tsp), Paprika (1 Tbsp) and Ground Black Pepper (1 pinch).

Slice the top of the Eggplant (1) off. Cut the eggplant in the middle lengthwise.

Using a mandoline, slice the eggplant lengthwise to make strips.

Pour marinade over eggplant strips. If using a dehydrator, marinate for an hour before dehydrating.

Lay eggplant strips on to parchment paper lined baking tray and bake for 8 minutes in preheated oven.

You can serve it with some toasted bread and vegan scrambled eggs or enjoy it by itself!
