Step 1
Preheat the oven to 350 degrees F (180 degrees C).
Step 2
Blend or mix together Tamari Soy Sauce (1/4 cup) , Maple Syrup (1/4 cup) , Apple Cider Vinegar (3 Tbsp) , Spicy Olive Oil (1/4 cup) , Liquid Smoke (1/2 tsp) , Salt (1 tsp) , Paprika (1 Tbsp) and Ground Black Pepper (1 pinch) .
Step 3
Slice the top of the Eggplant (1) off. Cut the eggplant in the middle lengthwise.
Step 4
Using a mandoline, slice the eggplant lengthwise to make strips.
Step 5
Pour marinade over eggplant strips. If using a dehydrator, marinate for an hour before dehydrating.
Step 6
Lay eggplant strips on to parchment paper lined baking tray and bake for 8 minutes in preheated oven.
Step 7
You can serve it with some toasted bread and vegan scrambled eggs or enjoy it by itself!
