Preheat oven to 400 degrees F (200 degrees C).

In a medium bowl, place cut Carrots (6 cups).

In a small bowl, whisk together Olive Oil (3 Tbsp), Honey (4 Tbsp), Vanilla Extract (1/2 tsp), Pink Himalayan Sea Salt (1 tsp), Simply Organic Cinnamon, Ground (1/4 tsp), Simply Organic Garlic Powder (1/2 tsp), Simply Organic Onion Powder (1/2 tsp), Ground Cumin (1/2 tsp), Ground Coriander (1/2 tsp), and Ground Black Pepper (1/4 tsp).

Pour over carrots; toss well to coat. Transfer carrots to a sheet pan.

Roast for 30 minutes, stirring about every 10 minutes, until carrots are golden brown and fork-tender. (It may take longer, depending on the thickness of your carrots.)

Serve warm with Fresh Cilantro (2 Tbsp), Pomegranate Seeds (3 Tbsp), and (optional) Feta Cheese (2 Tbsp).
