Spiced Honey Roasted Carrots

Sweet, spiced, crispy — these roasted carrots have it all! They’re the quintessential (and easy!) holiday side dish, ready in less than 45 minutes and always a crowd favorite. Serve them plain, or garnish with fresh cilantro, pomegranate and feta.

Cooking Instructions

Preheat oven to 400 degrees F (200 degrees C).

In a medium bowl, place cut Carrots (6 cups) .

In a small bowl, whisk together Olive Oil (3 Tbsp) , Honey (4 Tbsp) , Vanilla Extract (as needed) , Pink Himalayan Sea Salt (1 tsp) , Simply Organic Cinnamon, Ground (as needed) , Simply Organic Garlic Powder (1 tsp) , Simply Organic Onion Powder (as needed) , Ground Cumin (as needed) , Ground Coriander (as needed) , and Ground Black Pepper (as needed) .

Pour over carrots; toss well to coat. Transfer carrots to a sheet pan.

Roast for 30 minutes, stirring about every 10 minutes, until carrots are golden brown and fork-tender. (It may take longer, depending on the thickness of your carrots.)

Serve warm with Fresh Cilantro (2 Tbsp) , Pomegranate Seeds (3 Tbsp) , and (optional) Feta Cheese (2 Tbsp) .
