Step 1
Preheat oven to 375 degrees F (190 degrees C) and line a sheet tray with foil.
Step 2
Combine the
Ground Chicken (2 lb)

Breadcrumbs (1/2 cup)

Eggs (2)

Curry Powder (2 Tbsp)
, 1 tablespoon of the
Plain Greek Yogurt (1/2 cup)
,
Dijon Mustard (1 Tbsp)
,
Fresh Cilantro (1 Tbsp)
,
Onion (1)
,
Garlic Powder (1/2 tsp)
,
Salt (1 pinch)
, and
Ground Black Pepper (1 pinch)
in a large mixing bowl. Stir until well combined.
Step 3
Turn it out onto the prepared tray and form it into a tight loaf.
Step 4
Stir the remaining Greek Yogurt,
Curry Powder (1/2 tsp)
, and the Zest from the
Lemon (1/2)
together in another bowl and spread it over the top of the loaf.
Step 5
Bake the chicken loaf for about 50 minutes, until bubbly on top, slightly crisp on the outside, and cooked through.
Step 6
Let loaf rest for a few minutes before slicing.
Step 7
Serve garnished with some cilantro and your favorite sides!
