Step 1
In a bowl of your electric mixer mash the 2 of the Banana (2), then add the Coconut Sugar (100 gram), Coconut Oil (60 gram), Egg Replacer (1), and Rice Milk (180 milliliter). Mix until all the ingredients are combined.
Step 2
Add the All-Purpose Flour (250 gram), Matcha Powder (1 tablespoon), Baking Powder (1 teaspoon), and Salt (1 pinch). Stir them in just until combined.
Step 3
Line a bread loaf with parchment paper and pour in the batter. Slice up the 3rd Banana (1) lengthwise and lay it on top of the batter.
Step 4
Bake at 355 degrees F (180 degrees C) for about 40-45 minutes, or until a toothpick inserted in the center comes out clean.
Step 5
Let the bread cool down completely before slicing it. Enjoy!
