Moist and not-too-sweet plant-based banana bread, enriched by one of my favorite superfoods, matcha powder! Yields one loaf.

Cooking Instructions
1.
In a bowl of your electric mixer mash the 2 of the Bananas (2), then add the
Coconut Sugar (1/2 cup), Coconut Oil (2 oz), Egg Replacer (1), and Rice Milk (3/4 cup). Mix until all the ingredients are combined.
2.
Add the All-Purpose Flour (2 cups), Matcha Powder (1 Tbsp), Baking Powder (1 tsp), and Salt (1 pinch). Stir them in just until combined.
3.
Line a bread loaf with parchment paper and pour in the batter. Slice up the 3rd Banana (1) lengthwise and lay it on top of the batter.
4.
Bake at 350 degrees F (180 degrees C) for about 40-45 minutes, or until a toothpick inserted in the center comes out clean.
5.
Let the bread cool down completely before slicing it.
