Step 1
Grate Cauliflower (1/2 head) into “rice” using either a box grater or the grating attachment of your food processor.
Step 2
Heat Olive Oil (1 tablespoon) in a large skillet over medium. Add cauliflower and Bay Leaf (2). Cover and cook for 5 minutes, or until the rice becomes slightly tender.
