Author's Notes

For extra flavor, sauté the bell pepper rings for 1-2 minutes before adding the eggs.

Try adding cooked bacon bits, diced tomatoes, or a drizzle of hot sauce on top!

Slice the Green Bell Pepper (1) into even rings, about ½ inch thick. Remove any seeds and inner white membranes.

In a non-stick skillet over medium heat, add Butter (1 Tbsp). Once heated, place the bell pepper rings in the pan.

Gently crack one Eggland's Best Classic Eggs (3) into each bell pepper ring. If the egg whites spread out, use a spatula to tuck them back into the ring. Season with Salt (to taste), Ground Black Pepper (to taste), and Paprika (1 tsp).

Cover the pan with a lid and cook for 3-5 minutes, or until the whites are set but the yolk is still slightly runny. For fully cooked yolks, let them cook for an additional 1-2 minutes.

Carefully transfer to a plate. Garnish with Fresh Parsley (1 Tbsp) and a sprinkle of Parmesan Cheese (1 Tbsp). Serve with toast, avocado, or a side salad.
