In a mixing bowl, whisk together the All-Purpose Flour (2 cups), Salt (1/2 tsp), and Granulated Sugar (1 Tbsp). Cut in the chilled Unsalted Butter (1/2 cup) using a pastry cutter or your fingers until the mixture resembles coarse crumbs.

Gradually add ice-cold Water (4 Tbsp), mixing gently until the dough comes together. Do not overwork it.

Wrap in plastic wrap and chill for 30 minutes.

In the meantime, prepare the filling. In a small bowl, mix the Dried Currants (1 cup), Brown Sugar (1/3 cup), Simply Organic Cinnamon, Ground (1 tsp), Ground Nutmeg (1/2 tsp), Vanilla Extract (1 tsp), and Butter (2 Tbsp). Set aside.

Preheat the oven to 375 °F (190 °C).

Roll out the chilled dough on a lightly floured surface into a rectangle (about 10x12 inches), and spread the currant mixture evenly over the dough, leaving a small border around the edges.

Carefully roll the dough jelly-roll style (like a cinnamon roll) from the longer side. Tuck in the edges and place the roll seam-side down on a parchment-lined baking sheet.

Separate the Eggland's Best Classic Egg (1), and mix together egg yolk and Water (1 Tbsp). Brush the roll with the egg wash and sprinkle with Granulated Sugar (1 Tbsp) for a golden finish.
