Author's Notes

Cooking Tips:
  • Control the Heat: Scotch bonnet peppers are very spicy! Remove the seeds for a milder dish or use half a pepper. If you want less heat, try a milder chili like a Fresno pepper.

  • Extra Saucy? If you like more sauce, increase the broth to ¾ cup.
  • Make it a Meal: Serve with rice and sautéed vegetables for a complete Caribbean feast.

  • Shrimp Cooking Tip: Shrimp cooks fast! Once they turn pink and curl up slightly, they’re done—overcooking makes them rubbery.

Cooking Instructions

Pat the Large Shrimp (1 lb) dry and season with Salt (to taste) and Ground Black Pepper (to taste).

Heat the Vegetable Oil (2 Tbsp) in a large skillet over medium heat. Add the Onion (1) and Garlic (3 cloves) sauté for about 2 minutes until fragrant.

Stir in the Scotch Bonnet Pepper (1), Fresh Thyme Leaves (1 tsp), Paprika (1 tsp), and Ground Allspice (1/2 tsp). Cook for another 1-2 minutes.

Add Soy Sauce (1 Tbsp), Ketchup (1 Tbsp), and Seafood Stock (1/2 cup). Stir well and let simmer for 2-3 minutes.

Add shrimp to the pan, stirring occasionally, and cook for 3-5 minutes until pink and opaque.

Drizzle Juice of Lime (1) over the shrimp, toss in Spring Onions (2), and remove from heat.
