Cooking Instructions

Bring a pot of salted water to a boil. Add the Baby Potatoes (6) and cook until fork-tender (about 15-20 minutes). Drain and let them cool slightly.

Slice the potatoes in half and carefully scoop out some of the center, leaving about 0.3 mm of flesh attached to the skin, like a mini potato boat.

Place the empty potato skins on a baking sheet and bake at 400 °F (200 °C) for 10 minutes until slightly crispy.

Mash the scooped-out potato with Mayonnaise (2 Tbsp), Dijon Mustard (1 tsp), Smoked Paprika (1/2 tsp), Salt (1/2 tsp), and Ground Black Pepper (1/2 tsp). Divide the mash into 3 bowls for the different flavor variations.

For the classic version, mash together Yellow Mustard (1 tsp) and Distilled White Vinegar (1/2 tsp).

Mash the second portion with Sriracha (1 tsp), Lime Juice (1/2 tsp), and Ground Garlic (1/2 tsp).

For the herby avocado-lime deviled eggs, mix with mashed Avocados (2 Tbsp), Lime Juice (1/2 tsp), and Fresh Cilantro (1 Tbsp).

Spoon each mixture into a piping bag for a neater presentation, and pipe the filling back into the crispy potato halves.

Garnish each version as you like with Smoked Paprika (1 tsp), Sriracha, or fresh cilantro.
