First, whisk the All-Purpose Flour (1 3/4 cups), Caster Sugar (2 Tbsp), Baking Powder (1 Tbsp), Baking Soda (2 tsp), Ground Cinnamon (2 tsp), and Ground Nutmeg (as needed) together in a large mixing bowl.

In another bowl, whisk the Butter (1/2 cup), Milk (1 cup), Eggs (2), and Vanilla Extract (as needed) together.

Pour those wet ingredients into the dry ingredients and whisk them together until it becomes a thick, smooth batter. Switch to a spatula and fold in the Carrots (4), Walnuts (4 Tbsp), Raisins (4 Tbsp), and Unsweetened Shredded Coconut (4 Tbsp).

Get out your waffle maker and preheat it it. Spray it well with cooking spray.
