Preheat the oven to 350 degrees F (175 degrees C).
Slice the brussels sprouts to make 3 cups. Dice the Bacon (3 piece).
In a large skillet, melt Unsalted Butter (3 tablespoon) and add the bacon. Crisp the bacon for about 5 minutes.
Add the sliced Brussels Sprouts (3 cup) with a little Salt and Pepper (to taste) and continue to cook until softened; about 5 minutes.
Add the All-Purpose Flour (1 1/2 tablespoon), stir, and cook for another minute.
Gradually add the Cream (3/4 cup) and Half and Half (1/2 cup). Reduce the heat to medium-low and cook for another five minutes.
Remove skillet from heat, and stir in Mozzarella Cheese (1/2 cup).
Pour the brussels sprout mixture into the baking dish and sprinkle top with Gorgonzola Cheese (1/2 cup). Bake for about 25 minutes and with a few minutes left turn the broiler on to get a nice golden cheesy crust on top.
